Korean Beef Lettuce Wraps

This is a great money saving dish that takes minutes to throw together.  You can use inexpensive cuts like flank steak, skirt steak, or flat iron steak.  Be sure to slice the meat in thin slices across the grain for tender bites.  This benefits from lots of marinating so try to put it in the fridge the night before if possible.

  • 1 C. cola
  • 1/4 C. soy sauce
  • 3 T. toasted sesame seeds
  • 4 garlic cloves, smashed
  • 6 slices of bacon, cut into one-inch pieces
  • 1 yellow onion, sliced
  • 1/4 C. toasted sesame oil
  • 1/4 C. brown sugar
  • 1 T. grated fresh ginger
  • 1 1/2 -2 lbs. flank steak, skirt steak, or flat iron steak
  • 1 head of butter lettuce, separate the leaves, wash and dry
  • Cabbage Kimchi for serving

Combine the first 9 ingredients in a casserole dish.  Pierce the meat all over with a fork and place it into the marinade.  Cover and refrigerate for 4 hours or overnight, the longer the better.  Remove the bacon and onion slices from the marinade.  Stir fry over medium heat for about 8 minutes, or until the bacon is crisp.

Meanwhile, heat a grill pan to medium high heat.  Remove the meat from the marinade and grill the meat for 6 minutes per side for medium rare.

Allow the meat to rest for 10 minutes before slicing across the grain in thin slices.  Serve the meat with the bacon and onions and kimchi.  Use the lettuce leaves to wrap the meat, burrito style, and eat!  I promise you, you have never seen your child eat so much lettuce in one sitting.

    Do you have a good alternative to Butter lettuce? I’ve been trying to find something. We did a variation on this the other night and I could only find Bibb lettuce…

      The last time we had these I used red leaf lettuce and they were fine- How was the bibb?

        The bibb was ok, but not quite big enough. We’d had Asian lettuce wraps at a party with butter lettuce and they were fabulous. Red lettuce might work better since it’s bigger and more flexible…we’ll have to experiment. I wish we had a good farmer’s market close by.
