Potato Chive Fritters

This is a terrific use for leftover mashed potatoes.  A cup of mashed potatoes can sometimes seem like it isn’t worth saving.  Add a couple of ingredients and you’ve got a delicious side dish for a family of four .

  • 1 C. cold mashed potatoes
  • 1/4 t. salt
  • 1/4-1/2 C. panko crumbs
  • 1 T. sour cream
  • 1 t. chives
  • 1 egg
  • 1 T. canola oil

Combine the potatoes, salt, panko, sour cream, egg, and chives starting with 1/4 C. of panko crumbs.  If the mixture is too wet to hold its shape add a little more panko.  Heat a nonstick skillet to medium with the oil.  Drop the potato mixture by large tablespoonfuls into the hot pan.  Fry for about three minutes per side, or until golden brown.  This recipe makes about 8- 3 in. fritters.
