Here’s a great way to use up leftover steamed cauliflower. The panko gives it a nice crispy crust and the mozzarella cheese doesn’t hurt either!
- 1 C. steamed cauliflower, chopped
- 1 egg, beaten
- 1/4 C. plus 2 T. shredded mozzarella cheese
- 1/4 C. cream
- 1 T. parsley, chopped
- salt and pepper
- 1/4 C. panko crumbs
- cooking spray
Heat oven to 400 degrees. Combine the cauliflower with the egg, 1/4 C. of the cheese, cream, parsley, and salt and pepper. Pour into a small gratin dish. Sprinkle the top with the panko and the other 2 T. of cheese. Spray the top with cooking spray. Bake until bubbly and golden, about 20 minutes.
