Thai Coconut Sticky Rice
Heaven in a bowl. This rice is creamy and delicious with a delicate perfume of lime zest. It’s a great accompaniment to a spicy stir fry or any other Asian style main dish. The rice is Thai sweet rice which can be found at Asian grocery stores.
- 2 C. Thai sweet rice
- 3/4 C. unsweetened coconut milk
- zest of one lime
- pinch of salt
Rinse the rice, put it in a bowl and cover it with water. Let the rice soak all day or at least 3 hours. Rinse the rice and place in a steamer basket. Place the basket in a pot with an inch or so of water under it, just as though you were steaming broccoli. It seems like the rice will fall through the holes but it really won’t. Cover the pot with the lid and bring to a boil. When the water is boiling, remove the rice from the heat and set it on the counter, keeping the lid on. Allow the rice to steam on the countertop for about 30-40 minutes. When it’s done, the rice will be soft and sticky and easily clump together. Drain the water out of the pot and scrape the rice into the empty pot. Stir in the coconut milk, salt, and lime zest.
Coconut rice is AMAZING!!
