Candied Apples

Just in time for Halloween, these candied apples are guaranteed to scare dentists out of their wits!

  • cooking spray
  • 2 C. sugar
  • 3/4 C. water
  • 1/2 C. light corn syrup
  • 1 cinnamon stick
  • 10 drops red food coloring
  • plastic or wooden chopsticks
  • 5-6 medium apples

Line your countertop with parchment paper and spray lightly with cooking spray.  Prepare your apples by pulling the stems out and inserting a chopstick into them from the top down.  If the apples are waxed you should wash them first in hot water and dry with a paper towel.  In a heavy saucepan, combine the sugar, corn syrup, water, cinnamon stick, and food coloring.  Stir to combine.  Bring to a boil over high heat.  Reduce the heat to medium and boil until a candy thermometer reads 305 degrees.  Quickly remove from heat and pull out the cinnamon stick with a pair of tongs.  Dip your apples into the molten sugar and roll them to coat.  You need to work fast before the sugar begins to harden.  Place them on the parchment paper to cool.

*tip: keep a bowl of ice water nearby in case of any accidental sugar burns.  Also, the sugar will harden in your pot like glass.  You might say to yourself, “Son of a bxxxh, how am I going to get that cxxp out of there?  This is the last time I ever try one of Carrie’s recipes!” Don’t panic.  Put your pot in the sink and fill it with water.  After a little while the sugar will be completely dissolved and you will simply pour the sugar-water out.  These candy apples will take your child at least 45 minutes to eat, allowing you ample time for quiet relaxation.
