Ham and White Bean Soup, Leftovers #5

So I still have leftover ham.  I’m not sure anyone really needs a recipe for ham and white bean soup, but I’m including it in the spirit of full disclosure.  This is what we ate tonight.  My mother-in-law was kind enough to get this going in the crock pot today for us.  There is something so comforting about walking into a house that smells like good cooking!

  • 1 bag, white beans or navy beans
  • water
  • 1 ham hock with meat still attached
  • 1 yellow onion, diced
  • 1 sprig of fresh rosemary
  • salt and pepper to taste

Cover the beans with cold water and soak overnight.  In the morning place the ham hock in the slow cooker, pour in the beans and enough water to cover.  Add the onion and rosemary.  Cook on low for 8 hours.  Most of the meat will have fallen off the bone, but you may need to give it a little help with a fork.  Remove the bone.  Taste for seasoning.  Serve with lots of crusty french bread
