Spaghetti alla Carbonara with a Twist

I make this dish a little differently every time, depending on what I have on hand.  The basic recipe of spaghetti with bacon and eggs is updated with some lemon and fresh spinach.

  • 1 T. olive oil
  • 4 slices bacon, chopped
  • ¼ C. white wine
  • 3 C. fresh spinach leaves, loosely packed
  • 1 garlic clove, minced
  • 1 lb. spaghetti
  • 3 eggs
  • ¼ C. cream
  • 2 T. lemon juice
  • 1 t. lemon zest
  • ¼ C. grated parmesan cheese, plus more for serving
  • ½ C. fresh parsley, chopped
  • Salt and pepper

Heat the olive oil in a large skillet and add the bacon.  Sautee the bacon until crisp and brown and remove it to a paper towel.  Drain all but 1 T. of the bacon fat from the pan.  Add the white wine and allow it to bubble for about 1 minute.  Add the spinach and garlic and toss to coat.  Reduce the heat and continue to cook until the spinach is wilted, about two minutes.  Cover and keep warm while the pasta cooks.  Meanwhile, prepare your sauce ingredients in a medium bowl:  beat the eggs with the cream, lemon juice, zest, and cheese.  Cook the spaghetti until al dente and drain, reserving ¼ C. of the cooking liquid.  Set the cooking liquid aside.  Pour the drained spaghetti into the skillet with the spinach.  Pour the egg mixture over it and toss well to combine.  You must do this quickly while the pasta is hot enough to cook the eggs.  If the sauce is too dry you can add your reserved cooking liquid to loosen it up.  Toss in the cooked bacon and the parsley and season to taste.  Lots of fresh cracked black pepper is a must.

    I’m sooooo making this. I’m always looking for ways to incorporate spinach and other veggies into things. I have a hard time with veggies.
