Spareribs with Marmalade Glaze

Here is a great technique for spareribs that cuts down on the cooking time but still gives you a tender and moist result.

  • 1 rack of pork spareribs, cut into individual pieces.
  • 1 T. fresh grated ginger
  • 2 cloves of garlic, crushed
  • 2 T. dry sherry
  • 1/4 t. fresh grated nutmeg
  • 1/4 t. Chinese 5 spice powder
  • 3 T. hoisin sauce
  • 3 T. orange marmalade
  • 1 T. fish sauce
  • green onions for garnish

In a large bowl, place the ribs, ginger, garlic, sherry, nutmeg, and 5 spice powder and mix together with your hands, add the hoisin sauce and toss to coat.  Line a large roasting pan with foil, leaving enough foil hanging over the sides to fold over.  Layer the ribs into the pan and fold the foil over to cover loosely.  Roast at 400 degrees for one hour.  Open the foil wrap, baste the ribs and return to the oven for 5 minutes leaving the wrap open.  Meanwhile mix together the marmalade and fish sauce.  Brush the marmalade mixture over the ribs and return to the oven for 5-10 more minutes or until the glaze becomes sticky and golden brown.  Garnish with sliced green onions.
