Couldn’t Be Easier Marinated Pork Chops

These are a favorite in our house.  The marinade recipe is one that my mother has been using for about 30 years.  It’s still too good to tamper with.

  • 4 center cut, boneless pork chops, about 1 inch thick
  • 1 T. olive oil
  • 2 cloves of garlic, smashed
  • ½ t. paprika
  • Juice of 1 lemon
  • Salt and pepper
  • Olive oil for frying

Place all the ingredients in a plastic bag and toss to coat.  Place the bag in the fridge and marinate for at least 2 hours or overnight.  Heat a large skillet to medium heat and add about two teaspoons of olive oil.  Cook the pork chops for about 6 minutes on each side.  Allow the chops to rest for ten minutes before serving.
