I adapted this recipe with my mom, Chris Macca’s help. Thanks Mom!
- 1 lb. medium-sized fresh shrimp, peeled with tails left on
- 1 -2 t. olive oil
- salt and pepper
- zest of 1 orange
- 1/2 C. spicy cocktail sauce
- 1 T. freshly squeezed orange juice
- 1 T. fresh dill, chopped
Heat the oven to 400 degrees. Toss the shrimp in the olive oil and spread them out on a baking sheet. Sprinkle them liberally with salt and pepper and orange zest. Roast in the oven for 8-19 minutes, or until they are cooked through and sizzling. Place the shrimp in a bowl and sprinkle the fresh dill over the top. In a small bowl, combine the cocktail sauce with the orange juice and serve with the shrimp for dipping. These are equally good served hot or at room temperature.
