This is a quick and easy seasonal salad that goes with everything. Raw beets are packed with vitamins and minerals and taste terrific as long as you slice them paper-thin. A mandolin slicer is really handy for this.
- 1 golden beet, peeled
- 1 green, ripe pear
- 2 t. apple cider vinegar
- 1 T. apple juice
- salt and pepper to taste
- Maldon flaked salt for garnish
Use a mandolin to slice the beet and pear into paper-thin slices. Toss them gently in a bowl with the vinegar, apple juice, and salt and pepper. Arrange on a serving plate and garnish with a little flaked, crunchy salt. This salad is great served right away, and it’s best served at room temperature.
