Even Furby likes it. The secret ingredient in this delicious smoothie is beet greens. Beet greens are packed with Vitamin A, folate, and antioxidants. If you plan to sneak this to your kids, you need a good blender that will create a completely smooth puree. If your blender leaves bits and pieces, either you aren’t blending long enough or you need to buy a better one. I use a Kitchenaid, nothing too fancy. The blackberries for this need to be frozen to keep up the charade. I promise you, they will drink this if it’s good and smooth- you can’t taste the greens, just the fruit. Makes 4
- 1 1/2 C. frozen blackberries
- 1 frozen banana
- 2 C. fresh beet greens, washed and roughly chopped
- 2 containers of strawberry yogurt, I used Tillamook
- 1 C. apple juice (plus a little more to thin as needed)
Place all the ingredients in the blender and puree for at least a full minute. Check for smooth consistency, add a little more juice if it seems too thick. Puree a minute more, and serve immediately.
