Wondering what to do with your leftover ham? Here is an easy slow cooker soup that will be ready when you come home from work. I love coming in to the house with something cooking in the slow cooker. The smell welcomes you first, then you are reminded that a couple of minutes in the morning made it possible for you to skip cooking tonight!
- 1 bag, white beans or navy beans
- water
- 1 ham hock with meat still attached
- 1 yellow onion, diced
- 1 sprig of fresh rosemary
- salt and pepper to taste
Cover the beans with cold water and soak overnight. In the morning place the ham hock in the slow cooker, pour in the beans and enough water to cover. Add the onion and rosemary. Cook on low for 8 hours. Most of the meat will have fallen off the bone, but you may need to give it a little help with a fork. Remove the bone. Taste for seasoning. Serve with lots of crusty french bread
