These are an old family favorite. My mom used to make these on weekends and now I do the same for my family. We always top them with some of Grandma June’s strawberry freezer jam. One serving is about 1/2 a pancake, so this recipe makes two whole pancakes- enough for four people.
- 2 T. butter
- 4 eggs
- 1/2 C. flour
- 1/2 C. milk
- 2 T. sugar
- 1 pinch of salt
- strawberry jam and powdered sugar for serving
Heat the oven to 425 degrees. Use two glass pie plates for this. Place a tablespoon of butter into each pie plate and place the plates into the oven while it’s heating up to melt the butter. Meanwhile, mix the eggs, flour, milk, sugar, and salt in a bowl. When the butter is melted, pour half of the batter into each of the two pie plates. Bake for about 8 minutes, or until puffed and golden. Serve hot with jam and powdered sugar.
