We have been enjoying Portland’s recent Tiki revival. Here is a festive cocktail you may have forgotten about. This Mai Tai calls for orgeat syrup. You could substitute almond syrup (the kind they use at the coffee stand). I found orgeat syrup at Sheridan Market on SE MLK. They have a great selection of small batch cocktail mixers made locally. The only change we made to the recipe was that we used the juice of 1/2 a lime instead of the whole lime that was called for each drink. We simple didn’t have enough limes to use one for every drink! Makes 1 cocktail
- 2 oz. dark rum
- Juice from 1/2 a lime
- 1/2 oz. orange curacao
- 1/4 oz. simple syrup
- 1/2 oz. orgeat syrup
Combine all the ingredients in a shaker with ice and shake vigorously. Strain into an old-fashioned glass over crushed ice. Garnish with fresh mint.
