Grocery store puff pastry + 2 apples + sugar and spice = dessert for four in about 20 minutes.
- 1 sheet of defrosted puff pastry, cut into fourths
- 2 apples, cored and sliced very thin
- 1/4 C. sugar
- 1 T. minute tapioca
- 2 t. lemon juice
- 1/2 t. cinnamon
- 1 pinch, cloves
- 1 pinch, salt
Lay the puff pastry out on a parchment lined baking sheet. Preheat the oven to 375 degrees. Mix all the remaining ingredients together in a bowl. Spoon 1/4 of the apples onto each puff pastry rectangle. Fold the pastry over and pinch to seal the edges.
Poke a couple of holes in the top of each hand pie to vent the steam. Bake for about 20 minutes, or until the pastry is golden brown and the juices are bubbling with slowly bursting bubbles.

Those look fabulous. I love how quick they come together.
