If a guy from Kansas City married a girl from Thailand this barbecue sauce would be their baby. This sauce is a Midwestern style tomato/molasses based sauce but it get its kick from Thai sweet chili sauce. I plan to use it for some boneless country-style pork ribs, but I can think of a dozen other things to drizzle it on. It’s sweet, sour, mildly spicy, sticky goodness. You could also make several batches and can it in jars for a great homemade gift. Makes 2 generous cups.
- 1 C. ketchup
- 1 C. Mae Ploy Sweet Chili Sauce
- 3/4 C. apple cider vinegar
- 1/4 C. dark molasses
- 1/4 C. brown sugar
- 1/8 C. Worcestershire sauce
- 1/4 C. brewed coffee
- 2 T. ground mustard
- 1/8 C. soy sauce
Put all the ingredients in a heavy bottomed sauce pan or Dutch oven. Use a whisk to incorporate all the ingredients. Bring to a boil over medium heat. Reduce the heat to low and simmer without the lid for one hour, stirring occasionally.
