So I made the chicken tikka last night and even though it was delicious, we ended up with a little left over. My first thought was, chicken salad sandwiches, but we were out of mayo. So I turned it into a flavorful salad. Sometimes being out of mayo is a good thing. This will help you assuage the guilt of the upcoming chocolate binge you may be planning. Serves 2.
- 1 1/2 C. cooked chicken, chopped
- 3 C. spinach or other salad greens
- 1/4 C. fresh mint leaves
- 1 C. green beans
- juice of 1/2 a lemon
- 2 T. olive oil
- salt and pepper
Steam the green beans in a steamer or in the microwave. Place the greens and mint leaves in two bowls. Top with the chicken and warm green beans. Drizzle with the olive oil and lemon juice. Season with salt and pepper.
